  • Vanilla paste: 2 teaspoons (Vanilla extract can be used as a direct 1:1 substitute)l about experimenting with unique flavor combinations that will surprise and delight your taste buds. Our chefs are constantly coming up with new and exciting dishes that you won't find anywhere else.

The Fruit Element

Fresh apples: 3 medium-sized apples (Any variety available at your local grocery store works well; this is a great way to use up apples that are on the verge of turning bad)

Step-by-Step Cooking Instructions

1. Prep and Sift the Dry Base

  • Grab a large, deep mixing bowl to act as the foundation for your dry ingredients.
  • Measure and pour 3 cups of all-purpose flour straight into the bowl.
  • Add 1 cup of white granulated sugar followed immediately by 1 cup of brown sugar.
  • Measure out your warming spices to build the apple pie aromatics: sprinkle in 2 teaspoons of cinnamon, 1 teaspoon of nutmeg, and 1/2 teaspoon of ground cardamom.
  • Add 1 teaspoon of sea salt and 1 tablespoon of baking powder into the mix.
  • Take a hand whisk and stir all the dry elements together until the sugars, spices, and leavening agents are distributed evenly throughout the flour.

2. Introduce the Wet Binders

  • Crack 3 large eggs directly into the center of your seasoned dry flour mixture.
  • Measure and pour 1 cup of neutral vegetable oil over the eggs to act as the primary moisture agent.
  • Add 1 cup of your homemade apple butter to the bowl to drastically amplify the rich, spiced fruit profile of the cake batter.

3. Prepare and Process the Apples

  • Slice into the apples with a pairing knife to carefully cut around and remove the hard central core and seeds. Use a cutting board for safety to protect your fingers.
  • Chop the cored apples down into rough chunks.
  • Transfer the apple chunks into the bowl of a food processor to speed up the dicing process. Always be incredibly cautious never to reach your bare hands inside the processor bowl while the sharp chopping blade is seated.
  • Pulse the machine until the fruit is finely shredded or finely diced. If you do not own a food processor, you can easily dice the apples by hand into small, chunky bits; having tiny fruit pockets embedded within the finished cake yields a wonderful, jammy texture.
  • Empty the processed apples directly into your main mixing bowl with the other ingredients.

4. Mix the Pound Cake Batter

  • Turn on your stand mixer or begin stirring by hand, starting out on a very low speed setting to prevent the dry flour from puffing out over the edges of the bowl.
  • Keep mixing just until the wet ingredients absorb all the dry powders and the visible streaks of white flour at the absolute bottom of the bowl vanish completely.
  • Stop the mixer and use a flexible rubber kitchen spatula to aggressively scrape down the interior walls and base of the bowl. This pound cake dough is exceptionally thick, heavy, and dense, meaning unmixed flour pockets like to hide at the bottom.
  • Turn the mixer back on briefly to finalize a completely cohesive, uniform cake batter. Do not be alarmed by the heavy density of the mix; the intense level of natural moisture derived from both the apple butter and the raw processed fruit prevents it from drying out, ensuring a remarkably soft and fluffy final crumb.

5. Preheat and Prepare the Baking Pan

  • Preheat your kitchen oven or countertop mini oven. If you are baking in Europe, set the temperature dial to steady 160°C. If you are using a Fahrenheit-based oven, preheat the unit to 325°F (Note: 160°C translates roughly to just under 320°F, but a target of 325°F provides the ideal slow-bake environment for a dense cake).
  • Grab a standard decorative Bundt pan or your preferred baking form.
  • Spray the entire inside of the baking pan generously with a high-quality non-stick baking spray. Utilizing a baking spray that contains flour built right into the formula is highly recommended to ensure the caramelized fruit surfaces release cleanly from the pan design after baking.

Fill and Bake

  • Remove the mixing paddle or beaters, scraping off any excess clinging batter back into the bowl.
  • Carefully pour the thick cake batter into the prepared Bundt pan. To do this cleanly, pour the batter continuously into one deep side of the pan and allow the heavy mass to slowly slide and distribute around the central ring on its own. Try your absolute best to keep the batter from spilling inside the hollow central cone of the pan.
  • Take a spatula or spoon and lightly smooth out the exposed top surface of the batter to level it out perfectly.
  • Place the filled pan into the center of your preheated oven.
  • Bake at 160°C (325°F). The cake is fully baked when the top turns deeply golden and a toothpick inserted into the thickest center section comes out completely clean.

7. Invert, Cool, and Serve

  • Carefully remove the hot pan from the oven and set it onto a heat-safe surface.
  • Allow the pound cake to sit undisturbed in the pan for a bit to let the structure firm up slightly as it begins to drop temperature.
  • Position a flat serving platter or a rotating cake turntable directly over the open top of the Bundt pan.
  • Securely grip both the pan edges and the platter together, and swiftly invert the assembly upside down. Gently lift the pan straight up; if properly greased, the cake will slide right out onto the plate effortlessly.
  • Optional Fancy Presentation: While the cake can be served plain, you can elevate the presentation by spreading an extra layer of your warm homemade apple butter across the crown and scattering crispy streusel crumbles over the top.
