Banana Cake

Banana Cake

Ingredients List

The Cake Batter

  • Ripe bananas: 5 whole bananas (Choose overripe, highly fragrant bananas for the most intense flavor)
  • Whole milk: 123.6 grams (Can be substituted with heavy cream for added richness)
  • Lemon juice: 15 grams (Freshly squeezed; provides the acidity required to react with the baking soda)
  • All-purpose flour: 420 grams
  • Ground cinnamon: 1 teaspoon
  • Maple syrup: 160 grams (Light or dark variant depending on your preferred depth of flavor)
  • Toasted walnuts: 75 grams (Roughly chopped; can be substituted with pecans or hazelnuts)
  • Ground cardamom: 1 teaspoon
  • Ground nutmeg: 1/2 teaspoon
  • Baking soda: 9 grams
  • Sea salt: 1 teaspoon
  • Unsalted butter: 227 grams (Melted down and deeply browned to create an enhanced, nutty profile)
  • Granulated sugar: 300 grams
  • Brown sugar: 220 grams (Adds a natural caramelly flavor to the cake)
  • Large eggs: 4 eggs
  • Vanilla paste: 1 tablespoon (Vanilla extract can be used as a standard alternative)

The Maple Cream Cheese Frosting

  • Cream cheese: 227 grams (Standard pack, left out to soften completely)
  • Unsalted butter: 113 grams (Melted brown butter)
  • Vanilla paste: 2 teaspoons
  • Powdered sugar: 450 to 585 grams
  • Maple syrup: 80 grams

Step-by-Step Cooking Instructions

1. Toast and Chop the Walnuts

  • Measure out your 75 grams of walnuts and spread them evenly across a dry baking sheet.
  • Preheat your oven to 177°C (350°F).
  • Slide the tray inside and toast the nuts until they become fragrant and lightly golden.
  • Transfer the toasted walnuts to a clean cutting board. Use a sharp chef's knife to rough-chop them down into small, bite-sized pieces to scatter through the batter. Set them aside in a prep container.

2. Squeeze the Citrus Base

  • Set up a small clean bowl on your digital kitchen scale.
  • Take a fresh lemon, slice it directly in half, and use a manual kitchen juicer to squeeze out the liquid.
  • Filter out any stray seeds and weigh exactly 15 grams of the fresh juice into your bowl, leaving it nearby to activate your leavening agents later.

3. Brown the Butter

  • Place a light-colored saucepan or white pot over high heat on your stovetop. Pro Tip: Utilizing light-colored cookware is an essential defense against burning, as dark pans make it nearly impossible to visually track the color changes of the milk solids.
  • Melt your 227 grams of unsalted butter completely.
  • Keep the pan on the burner as it climbs to a rapid boil and begins bubbling heavily. Whisk constantly and do not leave the stove.
  • Watch for the bright yellow butter to shift into a deep amber-brown tint as dark speckles form at the bottom. As soon as it smells strongly of toasted nuts, pull the pot off the hot burner entirely and let it cool.

4. Process the Overripe Bananas

  • Peel your 5 overripe bananas and drop the fruit into a wide, stable mixing bowl.
  • Take a standard stainless steel potato ricer or potato masher to crush the fruit down.
  • Press firmly to extrude the bananas until you achieve a completely smooth, fluid purée that smells intensely fragrant.

5. Compile the Liquid Batter Ingredients

  • Zero out your digital kitchen scale with the banana bowl resting on top.
  • Pour 123.6 grams of whole milk and your 15 grams of pre-squeezed fresh lemon juice directly into the puréed bananas.
  • Add 160 grams of pure maple syrup into the same wet pool. Whisk the wet ingredients together briefly until combined, then set the bowl aside.

6. Whisk the Seasoned Dry Base

  • In a secondary large mixing bowl, compile the structural dry components of the cake.
  • Weigh and add 420 grams of all-purpose flour, 1 teaspoon of ground cinnamon, 1 teaspoon of ground cardamom, and 1/2 teaspoon of ground nutmeg.
  • Add 1 teaspoon of sea salt and exactly 9 grams of baking soda. Whisk all the dry elements together until uniform.

7. Build the Sugar and Butter Cream Base

  • Set up your stand mixer fitted with the paddle attachment.
  • Pour 300 grams of white granulated sugar and 220 grams of rich brown sugar directly into the mixer bowl.
  • Pour your 227 grams of cooled brown butter over the sugars, making sure to scrape out all the toasted dark flecks from the bottom of the pan.
  • Turn the mixer on a low speed setting to combine the fat and sugars cleanly.
  • Crack your 4 large eggs into the bowl one at a time while mixing, followed by 1 tablespoon of your vanilla paste.
  • Add the dry flour and spice mixture into the bowl, letting the machine turn until a very thick dough forms. Stop and perform a thorough scrape down of the sides and base of the bowl with a rubber spatula.

8. Finalize the Banana Cake Batter

  • Turn the mixer back on low and pour in half of your reserved banana and milk mixture to loosen up the thick dough.
  • Pour in the remaining half of the wet fruit purée along with the 75 grams of chopped toasted walnuts.
  • Mix until a smooth, pourable batter forms. Do not overmix the cake batter once the liquids are in, as over-agitating develops excess gluten, making the finished cake tough instead of soft and gooey. Complete the final folds gently by hand using your spatula.

9. Prepare the Cake Pans and Bake

  • Confirm your oven is holding a steady heat floor of 177°C (350°F).
  • Take two 8-inch round metal cake pans, line the bases with precut parchment paper rounds, and coat the interior surfaces generously with non-stick baking spray.
  • Pour the batter evenly between the two prepared tins, using a kitchen scale to ensure both pans carry an identical weight for uniform baking.
  • Optional Moisture Hack: Wrap wet fabric cake strips securely around the exterior perimeter of both cake pans before baking to prevent a high dome from forming and keep the edges soft.
  • Place the pans into the oven and bake at 177°C (350°F). Do not open the oven door early. The cakes are fully cooked when a toothpick inserted into the center emerges clean; remove them and let them cool completely down to room temperature.

10. Whip the Maple Frosting

  • In a clean mixing bowl, place 227 grams of completely softened cream cheese and 113 grams of melted unsalted brown butter.
  • Add 2 teaspoons of vanilla paste and 80 grams of maple syrup.
  • Add an initial 450 grams of sifted powdered sugar into the bowl.
  • Turn your hand mixer or stand mixer onto a low speed to incorporate the sugar slowly without creating a white cloud.
  • Increase the speed and beat the frosting thoroughly until it turns completely smooth, silky, and fluffy. Add up to 585 grams of powdered sugar if needed to achieve a stable spreadability.

11. Assemble and Decorate the Layer Cake

  • Ensure your baked banana cake rounds are perfectly cool to the touch before assembling. Note: Because the crumb structure is remarkably moist and gooey, do not attempt to slice the rounds horizontally into four layers while fresh, as they will tear; if you want more layers, freeze the rounds first to firm them up.
  • Place your first solid 8-inch cake layer flat onto a serving platter or rotating turntable.
  • Spoon a heavy portion of the maple cream cheese frosting directly onto the center of the cake. Use an offset spatula to push the frosting cleanly out to the edges.
  • Align the second cake layer cleanly over the frosted base, pressing down lightly to secure the assembly.
  • Spread the remaining frosting smoothly across the top surface of the cake, leaving the outer vertical sides lightly exposed for a beautiful rustic "naked cake" presentation. Slice with a sharp knife and serve fresh.
