  • Beef bouillon cube: 1 cube
  • Water: Enough to submerge the potatoes in the cooking vessel

The Creamy Mix-Ins

  • Goat cheese: 150 grams
  • Unsalted butter: 50 grams
  • Whole milk: 1/2 cup (Note: For a lactose-intolerant variant, substitute seamlessly with an equal amount of oat milk)

The Herb & Spice Blend

  • Chili powder: 2 teaspoons (Macedonian chili or cayenne works beautifully)
  • Garlic powder: 1 tablespoon
  • Onion powder: 1 tablespoon
  • Sea salt: 2 teaspoons
  • White pepper: 2 teaspoons

Step-by-Step Cooking Instructions

1. Prep and Wash the Potatoes

  • Thoroughly rinse your 1 kg of potatoes under cold running water to eliminate any remaining surface dirt or debris.
  • Decide whether you prefer an completely smooth texture or a rustic finish. If you want skinless potatoes, use a vegetable peeler to strip the outer layer now; otherwise, leave the skins on.
  • Place your washed potatoes onto a clean cutting board.

2. Cut into Medallions and Cube

  • Grip your kitchen knife carefully and slice each potato crosswise to form small, round medallions.
  • Gather your medallions together and chop them down into rough, uniform cubes.
  • Focus on keeping the pieces relatively small and uniform in size. Cutting them down small ensures they will cook rapidly and evenly all the way to their centers.

3. Infuse Flavor and Boil

  • Transfer your chopped potato cubes directly into your cooking pot. You can use a standard stovetop pot or an Instant Pot liner.
  • Take one full beef bouillon cube and drop it right into the pot over the raw potatoes. Frying or boiling your starch directly with a bouillon cube infuses a deep, rich foundation of savory flavor from the very beginning.
  • Pour cold water into the vessel until the liquid level completely covers and submerges the potato cubes.
  • Place the pot over high heat on your stovetop or set your pressure cooker.
  • Bring the liquid to a steady boil and cook until finished. Check for absolute doneness by piercing a cube with a fork; it should slip through effortlessly.

4. Rice the Hot Potatoes

  • Set up a large, sturdy metal mixing bowl on your workstation. A metal bowl is ideal here because it retains the residual heat beautifully, which is vital for melting your dairy additions later.
  • Position a stainless steel potato ricer directly over the metal bowl.
  • Drain your cooked potatoes thoroughly and spoon them into the hopper of the ricer in manageable batches.
  • Firmly press the handles together to extrude the potato fluff down into the bowl. Using a ricer creates a light, airy canvas that guarantees zero heavy lumps without over-working the starches into a gummy paste.
  • If you opted to leave the skins on during preparation, pause briefly between batches to clear away any spent skins trapped at the bottom of the hopper.

5. Incorporate Dairy and Emulsify

  • Immediately drop your 150 grams of goat cheese and 50 grams of butter directly into the pile of hot, freshly riced potatoes.
  • Pour 1/2 cup of milk (or alternative oat milk) evenly over the top.
  • Do not return the bowl to a stove burner. Rely entirely on the trapping residual heat bouncing off the riced starches and the metal bowl to naturally soften, melt, and fuse the butter and cheese together.

6. Season and Blend

  • Dust your spice profile cleanly over the wet mixture: scatter in 2 teaspoons of chili powder, 1 tablespoon of garlic powder, and 1 tablespoon of onion powder.
  • Add your 2 teaspoons of salt followed by 2 teaspoons of white pepper. White pepper provides a subtle earthy heat that blends seamlessly into the bright look of the dish.
  • Use a sturdy silicone spatula or heavy spoon to fold all the elements together from the bottom up.
  • Stir gently but thoroughly until the cheese dissolves into a silky, luxurious texture and the spices are distributed evenly.

7. Plate and Garnish

  • Scoop your finished, creamy potatoes out of the metal bowl and mound them into a clean serving dish.
  • Smooth out the surface slightly using the back of your spoon.
  • Shake a light final dusting of cayenne pepper or chili powder across the crown for a pop of color and a touch of surface heat. Serve immediately alongside your main dish while piping hot.
