Ingredients List

The Chocolate Base

  • Egg yolks: 4 large yolks (Note: Solid or broken yolks both work perfectly fine since they are being whisked anyway)
  • Granulated sugar: 70 grams to 76 grams
  • Heavy whipping cream (for heating): 1 cup
  • Semisweet chocolate: 200 grams (Note: If you are located in Europe, look for chocolate bars labeled as 50% to 65% cacao)

The Aerating Fluff Layers

  • Heavy whipping cream (for whipping): 400 ml (approx. 2 cups)
  • Egg whites: 4 large whites (Reserved from the separated eggs)

Step-by-Step Cooking Instructions

1. Separate the Eggs and Heat the Cream

  • Carefully separate 4 large eggs, pooling the 4 yolks into one medium-sized heat-safe mixing bowl and reserving the 4 egg whites in a completely clean, separate bowl for later use.
  • Measure 1 cup of heavy whipping cream and pour it into a small saucepan.
  • Place the saucepan over medium to medium-high heat on your stovetop cooktop.
  • Allow the cream to warm up gradually until it reaches a steady simmer with visible bubbles breaking the surface.

2. Whisk the Sugar and Egg Yolks

  • Set your bowl containing the 4 egg yolks onto your kitchen scale.
  • Pour roughly 70 to 76 grams of white granulated sugar directly into the yolks.
  • Take the bowl off the scale and begin whisking the mixture vigorously by hand using a wire kitchen whisk.
  • Continue whisking until the texture smoothly emulsifies and the color transforms from a dark yellow-orange into a notably pale, creamy light orange.

3. Temper the Eggs and Melt the Chocolate

  • As soon as your stovetop cream climbs into a rolling boil, remove it from the hot burner.
  • Slowly pour a thin, continuous stream of the boiling hot cream directly into your pale egg yolk mixture while simultaneously whisking very rapidly with your other hand. Pro Tip: Pouring slowly while whisking constantly prevents the hot cream from scrambling the raw eggs.
  • Immediately drop 200 grams of semisweet chocolate pieces directly into the warm egg and cream mixture. If your kitchen environment is cool, chop the chocolate into fine pieces first to accelerate the process; if your kitchen is quite warm, the solid pieces will melt easily on their own.
  • Keep stirring continuously. The liquid base will gradually deepen in color and thicken as the chocolate melts completely into a uniform, rich liquid soup.
  • Place the chocolate base into your refrigerator to cool down slightly while you prepare the remaining fluff layers.

4. Whip the Heavy Cream

  • Set up a stand mixer fitted with the whisk attachment, or prepare a clean mixing bowl with a hand mixer.
  • Pour 400 ml (2 cups) of cold heavy whipping cream directly into the mixer bowl. Attach a splash guard and drape a clean kitchen towel over the top to keep your counters clean.
  • Whip the cream on high speed, watching it closely so it does not overmix and accidentally churn into homemade butter.
  • Stop the mixer as soon as the cream forms solid, distinct stiff peaks.

5. Whip the Reserved Egg Whites

  • Remove the whipped cream from the mixer bowl and set it aside in a separate cool container. Thoroughly wash and dry your mixer bowl and whisk attachment. Pro Tip: Egg whites will refuse to expand properly if there is any leftover fat or moisture clinging to the equipment.
  • Drop your 4 reserved egg whites directly into the clean mixer bowl.
  • Whip on high speed with your splash guard attached.
  • Let the mixer run until the liquid egg whites expand completely into soft, frothy, cloud-like white bubbles.

6. Fold the Mousse Mixture

  • Retrieve your cooled chocolate soup base from the refrigerator.
  • Add your whipped cream into the chocolate bowl.
  • Use a flexible spatula to fold the mixtures together gently by hand: scoop underneath the dense chocolate base, pull it up, and fold it over the light cream. Repeat this slow rhythmic scooping motion to incorporate volume without flattening the aeration.
  • Once the cream is mostly combined, drop in half of your fluffed egg whites to act as a sacrifice layer to lighten the density. Fold gently.
  • Add the remaining half of the egg whites to the bowl.
  • If you see stubborn lumps or unmixed pockets, break the standard pastry rule and grab your wire baking whisk. Give the mixture a very light, gentle manual whisking to quickly homogenize the texture into a smooth, uniformly silky mousse.

7. Set and Chill

  • Stop mixing as soon as the texture looks completely smooth and airy.
  • Cover the bowl securely and place it into the refrigerator to firm up.
  • Allow the mousse to chill continuously to let the fats solidify into a structure that is simultaneously light, fluffy, and dense enough to hold its shape.
  • Spoon into glasses, garnish with fresh seasonal berries or fruit if desired, and serve cold.
